Classic Horiatiki (Authentic Greek Salad)
Ingredients
- Cucumbers: 6 mini cucumbers (or 1 large English cucumber), thinly sliced
- Tomatoes: 14 oz grape or cherry tomatoes, halved
- Cheese: 3 oz Greek feta cheese, crumbled
- Olives: 6 oz Kalamata or black olives, pitted and drained
- Oil: ¼ cup extra-virgin olive oil
- Herbs: 1 tbsp dried oregano
- Seasoning: ½ tsp coarse sea salt
- Acid: 1 tsp red wine vinegar (or to taste)
Instructions
- 01Prepare the Produce: Wash all vegetables thoroughly. Using a mandoline or sharp knife, thinly slice the cucumbers. Slice the cherry or grape tomatoes in half.
- 02Combine Base Ingredients: In a large mixing bowl, combine the sliced cucumbers, halved tomatoes, crumbled feta cheese, and Kalamata olives. Gently toss until evenly distributed.
- 03Whisk the Dressing: In a separate small bowl, whisk together the extra-virgin olive oil, dried oregano, coarse sea salt, and red wine vinegar until well emulsified.
- 04Dress and Chill: Pour the dressing over the salad mixture and toss gently to coat. Cover and refrigerate for at least 2 hours prior to serving to allow the flavors to meld.
